Avocado & Papaya Salad

Growing up in Italy we didn't have Avocados.  Since moving to the U.S. I have become obsessed with them!  I travel with them and add them to as many dishes I possibly can.  I mean, why wouldn't you?  They are delicious, filling, great for your health and skin.  Here is an incredibly easy, healthy and delicious Avocado & Papaya Salad for your Summer BBQ's and Party's.  I hope you love it as much as I do!

 

2 ripe Papayas, peeled, halved, and seeded

2 Avocados, peeled, halved, and pitted

1/4 cup Extra Virgin Olive Oil

2 TBS Coconut Nectar or Raw Local Honey

Juice & Zest of 1 Lime

1/2 tsp of Himalayan or Sea Salt

1/4 tsp Cayenne Powder 

2 TBS Sprouted Pumpkin Seeds

Place the diced Avocado and Papaya in a serving bowl. 

Slice the papayas widthwise into 1/2-inch thick slices.  Slice the avocados lengthwise into 1/2-inch thick slices.  Arrange overlapping slices on a serving platter, alternating slices of avocado and papaya.

In a small bowl, combine the Olive Oil, Coconut Nectar or Honey, Lime Juice and Zest, Salt, and Cayenne Powder, whisk to combine.  Spoon the dressing over the avocado and papaya.  Sprinkle with Sprouted Pumpkin Seeds.  Serve immediately.
